Banana Bread
Don’t throw out your browning bananas! They make delicious
contributions to smoothies or banana bread. If you don’t have time to make
bread when the bananas turn brown, just stick them in the freezer, peel and
all. When you are ready to make bread, put them on a plate in the microwave for
a couple minutes. They will slide out of the peel when you cut it open. This is
my favorite recipe because it is delicious and quick to assemble. You can
experiment with it. Try adding chocolate chips or pecans. If you triple this
recipe you will have enough batter to make a large loaf, or 4 small loaves.
Banana Nut Bread
1 ¾ cups flour
2 tsp. baking powder
¼ tsp baking soda
½ tsp salt
2/3 cup sugar
1/3 cup shortening
2 eggs
1 cup mashed bananas
½ cup walnuts (optional)
Heat oven to 350 F. Cream sugar and shortening; add eggs.
Mix dry ingredients. Add to creamed mixture with bananas and nuts. Stir just
until moistened. Pour into greased small loaf pan. Bake for 40 minutes.
